Ingredients

  • 1/4 - 1/2 teaspoon freshly ground black peppercorns
  • 3/4 lb pork tenderloin
  • 2 tablespoons butter or margarine
  • 3 tablespoons brandy
  • 1/2 cup whipped cream
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1 pinch dried thyme

 

Directions

  1. Press pepper into meat with fingers.
  2. Heat butter in frying pan just large enough to hold pork, over medium-high heat.
  3. Brown pork on all sides and reduce heat to low.
  4. Pour brandy over pork.  Stir in remaining ingredients; mix well.
  5. Cover and cook  for 20 to 25 minutes.
  6. Remove pork and cut into 1/2 slices.
  7. Pour sauce over top.
