- 1 Halenda's Meats chicken breast
- 3 tbsp pesto sauce
- 1/2 cup chopped roasted red pepper
- 2 slices of provolone
- 1 slice of prosciutto
- 9 pieces of Halenda's bacon
- On a baking sheet slightly overlap 6 bacon strips across the sheet. Cut three bacon strips in half and place on both short sides of sheet and set aside.
- Butterfly the chicken breast by placing your hand over the breast and sliding your knife horizontally through half the thickness of the breast almost to the end. Then open like a butterfly.
- Place in between two pieces of parchment or plastic wrap.
- Using the smooth side of the meat mallet start pounding the chicken from the centre out until you get an even thickness throughout.
- Spread the pesto sauce, then sprinkle the roasted red pepper.
- Add the two provolone slices at bottom edge and top with prosciutto slice.
- Using the parchment paper start to roll the breast while tucking the filling until fully rolled.
- Place rolled chicken on the tray with bacon and wrap.
- Place into a preheated oven of 375°F to cook until the chicken reaches an internal temperature of 165°F.
- Let cool for 5 mins, slice and enjoy!
