Corned Beef with Cabbage and Potatoes
Ingredients
- 6 lb Halendas Meats corned beef brisket rinsed in cold water to remove excess salt
- 2 tbsp pickling spice
- 14 oz Guinness beer
- 2½ cups water
- 1 small yellow onion peeled
- 3 garlic cloves peeled
- 2 cups small potatoes
- 2 cups carrots cut into 1-inch pieces
- 1 head cabbage cut into 8 wedges
Instructions
- Preheat the oven to 350°F (175°C).
- Place the corned beef brisket in a large oven-safe pot with a lid.
- Sprinkle the pickling spice over the brisket.
- Pour in the Guinness beer and water.
- Cover the pot and cook in the oven for 3 hours.
- Remove the pot from the oven. Transfer the corned beef to a baking sheet and loosely cover with foil to rest.
- Place the pot with the cooking liquid on the stove over medium-high heat.
- Add the onion, garlic, potatoes, carrots, and cabbage to the pot.
- Cook for about 15 minutes, or until the potatoes are fork-tender.
- Remove the vegetables from the pot.
- Trim the fat cap from the corned beef if desired, then slice the brisket against the grain.
- Serve the corned beef with the vegetables, garnish with chopped parsley, and serve with grainy mustard or horseradish.
