Fresh Mushroom and Chicken Noodle Soup
Cozy up with a fresh bowl of mushroom and chicken noodle soup. This soothing broth, vegetable and chicken soup is rich in flavour. The mushroom broth is earthy and delicious with tender noodles. Hide from the cold weather and cheer up with a fresh bowl of comforting chicken noodle soup.
- 2 boneless chicken thighs skins removed, diced
- 6 cups mushroom broth
- 2 Tbsp olive oil to saute vegetables
- 1/4 cup soy sauce
- 1 medium onion finely chopped
- 2 medium celery sticks finely chopped
- 1 cup of sliced mushrooms
- 2 carrots
- 1 bunch of bok choy
- 1/2 lb soba noodles
- 1 Tbsp sea salt
- 1 garlic clove pressed
Heat olive oil in a medium pot over medium heat.
Add sliced mushrooms, carrots and add to pan for 4 minutes.
Stir in garlic; continue to cook for 1 minute or until fragrant.
Add soy sauce and stir; cook for 3 minutes or until mushrooms are soft.
Stir in mushroom broth and bring to a boil.
Add chicken, return soup to a boil, and reduce heat back to moderate. Cook chicken 2 minutes
Add noodles and greens; cook until the noodles are tender, about 5 to 6 minutes.
Remove from heat and ladle into soup bowls.
