Ingredients
- 2 boneless chicken thighs skins removed, diced
- 6 cups mushroom broth
- 2 Tbsp olive oil to saute vegetables
- 1/4 cup soy sauce
- 1 medium onion finely chopped
- 2 medium celery sticks finely chopped
- 1 cup of sliced mushrooms
- 2 carrots
- 1 bunch of bok choy
- 1/2 lb soba noodles
- 1 Tbsp sea salt
- 1 garlic clove pressed
Directions

Heat olive oil in a medium pot over medium heat.

Add sliced mushrooms, carrots and add to pan for 4 minutes.

Stir in garlic; continue to cook for 1 minute or until fragrant.

Add soy sauce and stir; cook for 3 minutes or until mushrooms are soft.

Stir in mushroom broth and bring to a boil.

Add chicken, return soup to a boil, and reduce heat back to moderate. Cook chicken 2 minutes

Add noodles and greens; cook until the noodles are tender, about 5 to 6 minutes.

Remove from heat and ladle into soup bowls.
