Homemade Corned Beef Sandwich

Equipment

  • 1 Crock Pot

Ingredients
  

  • 1 Halenda's Meats Corned Beef Brisket
  • 7 Medium Red Potatoes
  • 1 Onion
  • 1 Beer
  • 4 Cups Water
  • 2 Tbsp Pickling Spice or Corned Beef Spice Pack

Making The Sandwich

  • Thousand Island Dressing
  • 2 Slices Swiss Cheese Per Sandwich
  • 1 Jar Sauerkraut
  • 2 slices Rye Bread Per Sandwich
  • Butter

Instructions
 

  • Wash and pierce 4-5 potatoes and line together in the middle of the crockpot to form a stand for your corned beef brisket.
  • Rinse corned beef brisket and then place on top of the potato stand.
  • Quarter the remaining potatoes, and slice 1 onion. Place the potatoes and onion on the side of the corned beef brisket to help keep it in place.
  • Add your spice mix, beer and water to the crock pot.
  • Now close the lid on your crock pot and cook on low for 8 hours.
  • Once it has finished cooking, remove corned beef brisket and allow to rest.
  • Now it is sandwich-making time. Slice your corned beef to your desired thickness and dress your sandwich with thousand island dressing, swiss cheese, corned beef and sauerkraut.
  • Add butter to your bread and fry a pan until bread turns golden brown and the cheese melts.
  • Slice and enjoy!
