A Corned Beef History

The origins of corned beef can be traced back to ancient times when people sought ways to preserve meat for extended periods without refrigeration. The term “corned” refers to the coarse grains of salt used to cure the beef. The technique of salting meat dates back thousands of years, with evidence of its use by ancient civilizations like the Chinese, Egyptians, and Celts.

In Ireland, corned beef became closely associated with their culinary history, particularly during the 17th century. During this time, the British ruled Ireland, and beef was a luxury product exported to Britain, while the Irish predominantly consumed pork. The Irish farmers, however, discovered that corned beef was an excellent way to preserve surplus beef. They would cure the meat with salt and spices, allowing it to develop a robust flavour and a prolonged shelf life. Interestingly, Irish immigrants brought this tradition with them to the United States, where it became popular, especially in the Irish-American community, especially enjoyed on St. Patricks Day!
