Irish Coddle is a beloved Dublin dish, dating back centuries, known for its ability to transform simple ingredients into a hearty, flavour-packed meal. Originally a way to use up leftovers, this dish has evolved into a slow-simmered comfort food that’s perfect for chilly nights and festive gatherings alike.
Ingredients:
- 6 slices Halenda’s Ruby Red Bacon
- 2 small cooking onions, diced
- 2 Tbsp butter
- 3 cloves garlic, minced
- 1 1/2 tsp thyme
- Salt & Pepper to taste
- 1 Tbsp paprika
- 1/4 cup fresh parsley, chopped
- 1 large can beer
- 4-5 potatoes, quartered
- 4 cups beef broth
- Halenda’s Kranska Sausages
How to Make Irish Coddle Soup:
- Cook the Bacon & Onions:
- In a large pot over medium-high heat, slice your Halenda’s Ruby Red Bacon into ½” pieces and cook until almost crispy.
- Add the diced onions and sauté until they become translucent.
- Build the Flavour Base:
- Stir in the minced garlic, thyme, salt, pepper, parsley, and paprika.
- Cook for a few minutes until the garlic becomes fragrant.
- Simmer with Beer:
- Pour in the beer and let it simmer on medium-high heat until it fully cooks down, enhancing the depth of flavour.
- Add the Heart of the Dish:
- Stir in the quartered potatoes, beef broth, and Halenda’s Kranska Sausages.
- Cover and let simmer on medium-low heat for about 2 hours, allowing all the flavours to meld together beautifully.

Irish Coddle Soup Recipe
Ingredients
- 6 slices Halenda's Ruby Red Bacon
- 2 Onions diced
- 2 tbsp Butter
- 3 cloves Garlic minced
- 1.5 tsp Thyme
- Salt and pepper to taste
- 1 tbsp Paprika
- 1/4 cup Parsley fresh
- 1 can Beer large
- 4 Halenda's Kranska or Fresh Pork Sausages
- 5 Potatoes quartered
- 4 cups Beef broth
Instructions
- Using a large pot on a medium high heat, begin your Irish Coddle Soup by slicing your bacon into 1/2" pieces.
- Add the chopped bacon into your pot.
- Once your bacon is almost all the way cooked through, add your diced onions.
- Once your onions are almost translucent add your garlic, thyme, salt, pepper, parsley and paprika. Stir for a few minutes, or until your garlic becomes fragrant.
- Next, add your beer. You want to fully render/cook this beer down. Simmer on medium high heat until the liquid as dissipated.
- Once it has, add your potatoes, beef broth and sausages. Cover and let simmer (medium low heat).
- Let this Irish coddle soup flavours come all together for about 2 hours.
