Hey there, foodie friends! Ready to embark on a taste adventure? Well, we've got just the ticket – Italian Wedding Soup.
But hey, don't let the name fool you; you don't need a ring on your finger to enjoy this flavour fest.
It's a soup that's serious about taste but doesn't take itself too seriously. So, aprons on, let's dive into the delicious chaos!

  • 1/2 lbs Halenda's Meats Ground Beef
  • 1/2 lbs Halenda's Meats Ground Pork
  • 1/2 cup bread crumbs (fresh) if using dried, use a little less. 
  • 1/4 cup grated parmesan cheese/or Romano cheese or a combination of both.
  • 3 gloves of garlic
  • 1/3 cup fresh parsley finely chopped 
  • splash of milk
  • 3/4 tsp salt
  • 3/4 tsp pepper


  • 8 cups chicken Broth
  • 1 cup carrots, diced
  • 2 sticks celery, diced finely
  • 1 onion, diced
  • 2 gloves of garlic
  • 5 cups fresh spinach
  • 3/4 cups pastina - acini di pepe
  • 1 bay leaf


  • In a bowl, combine the ground beef and pork, bread crumbs, Parmesan/pecorino romano cheese, chopped parsley, egg, salt, milk and pepper.
  • Shape the mixture into small meatballs and set aside.
  • In a pan, heat olive oil over medium heat.
  • Brown the meatballs on all sides until golden brown.
  • Remove the meatballs and set them aside.
  • In a pot, add olive oil, then add onions, carrots, celery, and garlic and cook until softened and aromatic.
  • Pour in the chicken broth, adding bay leaves, salt, and pepper.
  • Bring the broth to a simmer and let it cook for about 10 minutes to allow the flavours to meld.
  • Now in your meatballs, pastina pasta and fresh spinach and simmer until pastina is fully cooked. Refer to packaging on pastina.
  • Taste and adjust the seasoning if necessary.
  • Sprinkle freshly grated Parmesan cheese on top and enjoy!
