Mushroom & Cheese Stuffed Striploin Steaks
This striploin steak is stuffed with mushroom and cheese then cooked to perfection for a worthy main dish.
- 4 striploin steaks cut 1 1/2 inches thick
- 4 cups assorted mushrooms – cut thick
- 1/4 cup chopped Italian parsley
- 1 tbsp. crushed crumbled Gorgonzola
- 1/4 cup of your favorite dry rub
- 1 tbsp. unsalted butter
- Pinch of kosher salt
Melt butter in saucepan, add mushroom and brown remove from heat and place in bowl.
Add parsley, salt, pepper, Gorgonzola cheese cool completely. Make a pocket in steak using a very sharp knife making sure not to cut through sides of steak. Stuff steak with mushroom mixture, rub steaks with dry rub and place steaks in fridge overnight to blend flavors.
Remove steaks from fridge and bring to room temperature, place medium high grill turning after approx. 5-7 minutes, or until steak done and when cheese starts melting out of steaks.
