  • 2 lbs Halenda's Meats Beef short ribs, bone-in cut into singles
  • 2 tbsp 2 tbsp beef tallow (or olive oil)
  • 1 large onion, chopped
  • 1 large carrot, diced
  • 2 celery ribs, chopped
  • 5 cloves garlic minced
  • 1/2 cup red wine
  • 3 tbsp tomato paste 
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp Worcestershire sauce
  • 2 cup beef stock

Instructions
 

  • Brown the Ribs: Start by preheating your Instant Pot on the sauté function. Add beef tallow (or olive oil), and brown the Halenda's short ribs on all sides. Once browned, transfer the ribs to a tray and set aside.
  • Sauté the Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened, about 5-7 minutes, then add minced garlic and stir.
  • Deglaze with Red Wine: Pour in the red wine and stir well, scraping any brown bits from the bottom of the pot to add flavor to your sauce.
  • Mix in the tomato paste, rosemary, thyme, oregano, salt, pepper, and Worcestershire sauce. Let everything simmer for a couple of minutes to marry the flavours.
  • Pour in the beef stock and let the mixture come to a boil. Then, return the browned short ribs to the pot.
  • Secure the pressure cooker lid and set the release valve to "sealing." Pressure cook on high for 60 minutes. Once cooking is complete, allow the pressure to naturally release for at least 15 minutes before doing a quick release.
  • Once the short ribs are cooked, remove them and a few ladles of sauce to a dish. Use an immersion blender to blend the remaining sauce in the pot until smooth and thick.
