Ingredients
- 4 Halenda's Meats Butterly Pork Chops
- 1 Jar of sun-dried tomato in oil (chopped)
- Fresh baby spinach
- 4 Slices Provolone cheese
- Salt and pepper to taste
- Olive Oil
Instructions
- Season all sides of pork with salt and pepper.
- Flatten pork loin and place 1/4th of the sun-dried tomato on one side, followed by baby spinach then top with provolone cheese.
- Fold the pork loin over and secure with toothpicks.
- Preheat your oven to 350°F.
- In an oven safe pan, (preferably a cast-iron pan) add a bit of olive oil and sear the pork on both side until golden brown.
- Place in the oven for 30 minutes until the internal temperature comes up to 145°F.
- Remove from the oven and let rest for a few minutes.
