Ingredients
  

  • 40 tater tots (defrosted or microwaved for 1 minute)
  • 1 cup mushrooms (finely chopped)
  • 1 lb Halenda’s Meats ground beef
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard (plus extra for coating meatballs)
  • 1/2 cup parmesan cheese (grated)
  • 1 tsp Italian seasoning
  • 1 tbsp fresh parsley (finely chopped)
  • 16 slices prosciutto

Instructions
 

  • Preheat your oven or BBQ to 400°F.
  • Defrost tater tots or microwave them for a minute to soften. Arrange 10 tots in a tight circle on a parchment-lined baking sheet. Press down with a flat surface (like a plate) to bind them into a flat round.
  • Precook in the oven or BBQ for 10 minutes.
  • Heat chopped mushrooms in a medium pan over medium-low heat. Stir until all the moisture evaporates, about 5–7 minutes.
  • In a medium bowl, combine Halenda’s ground beef, egg, salt, pepper, Worcestershire sauce, mustard, Parmesan, Italian seasoning, and parsley. Mix thoroughly.
  • Roll into 2" meatballs. Coat each ball with Dijon mustard and wrap in two slices of prosciutto, crossing them to seal
  • Place a meatball on one tater tot round. Top with another tater tot round, pressing to seal.
  • Grill or bake for 40 minutes, or until golden and crispy.
